  1. Place chocolate, butter and espresso powder in a microwavable bowl.
  2. Simmer the cream on the stove and then pouring it over the chocolate and butter. Let sit for 1 minute, then stir.
  3. If the chocolate is still chunky, put the bowl in the microwave for 45 seconds and stir again. The chocolate should be shiny and completely lump free.
  4. Pour the chocolate mixture into a pan that is lined with parchment and chill in the refrigerator for 20-30 minutes.
  5. Once the chocolate is firm-ish, scoop it from the pan with a spoon and form into balls with your hands. This is tricky, because if the chocolate is too warm, it will be impossible to form into balls and if it is too cold it’s difficult to mold as well.
  6. Place the truffles back into the fridge for 10 more minutes to firm up.
  7. Roll the truffles in whatever coating you’d like. The most traditional – and easiest – is cocoa powder. I finely crushed the beet chips and made a red powder with them for Christmas. Macha Green Tea Powder and powdered sugar was combined to create a green coating. I also used sprinkles and nuts as well.
  8. Store in the fridge to preserve freshness.
